A rustic, easy-drinking lighter style red wine made by the Cistercian Trappiste sisters in their breathtaking 5 ha walled estate at Vitorchiano, northeast of Rome. The sisters rent this particular parcel of land from their immediate neighbour, who became too elderly to look after it.
The only red wine they produce, it is made with the same low-intervention approach of all their wines, under the supervision of Italian natural wine legend, Giampiero Bea.
A light hued red with plenty of structure, it sees 15 days maceration, fermenting with ambient yeasts and without any filtration or stabilisation. Aromas of dried leaves, tobacco and red liquorice lead to a floral palate with tannins and a lively finish.
